Quince, a distant cousin of apples and pears, is the last fall fruit we harvest, and even then it is still rock hard. We ripen it indoors until it releases its perfumy aromas. Then in the darkest days of winter, we race to process it in peak condition.
We cofermented the fruit with wildflower honey to produce a sweeter style beverage. Explore food pairings like ham & swiss, shellfish, curry, and even Hawaiian pizza.
