Etta Place Dry and Grand Circle Semi-dry all tweaked to maximize the flavor profiles of the tannin field-blends we made in October. We're making a lot of the new All-American - so good and we want it to last a full year this time. It's hard work tasting so many good ciders, but we were up to the challenge today!⁠

That fermentation is done and going to be blended into the next round of Grand Circle Semi-dry (as soon as the other fermentations from the later harvests are ready.) Cider really is the year in a bottle.
